Cantina Del Nonno Pescetto is located in the municipality of Santo Stefano di Magra, in the province of La Spezia. In addition to various still wines, it also produces a classic method sparkling wine: our "Rasola."

This is a product born from the passion of Massimo and Edoardo, father and son who decided to take over the small company of engineer Rozzia, renowned locally for producing traditional-method sparkling wine from 100% Vermentino grapes.

The two modified the production method and in 2016 launched the first bottle on the market, reaching an overall production level of around 1000 bottles per year.

Rasola Classic Method Sparkling Wine

The vines are trained using the Guyot trellis system; the winemaking process involves harvesting the grapes before they are fully ripe, then gently pressing them in the cellar. The must ferments at a constant temperature of approximately 15°C (59°F) and ages in steel tanks for 6 months. Finally, the wine undergoes a second fermentation in the bottle and ages on the lees for 24 months.


It has a golden yellow color and a fine perlage; on the nose it is fruity and fragrant, characterized by floral notes;

the taste is fresh, creamy and quite soft, with an excellent balance;

Serving temperature: between 8° and 10°. We recommend pairing it with shellfish and raw seafood or at the end of a meal for a touch of liveliness.
